"I leapt at the opportunity and it changed my life. Over the course of seven rigorous days that included classroom time, meat science, farm time, animal husbandry, butchery, olfactory sense testing, inventing a salume and even a written test in front of the Mayor of Crotone. In my 35 years’ experience making salume I think it’s safe to say that I certainly have a firm grasp on the fundamentals and principles of this wonderful craft so I was pretty confident I would do well (I did) the thing that hit me the hardest was close to a religious experience, a feeling I walked away with and still feel to this day. Great things come from your soul especially food and the time I spent with the Master and the beauty of Southern Italy truly moved me. Alessandro Cuomo has preserved the ancient traditions and introduced it to modern technology. His inventions are astounding. As stated, I’ve been making salume for a very long time but since using the Stagionello and Cuomo Method of food transformation my product has been the very best I’ve ever made. I’m not saying I make the best in the world I’m saying I make the best in MY world, I’m only in competition with myself.”
